小貼士1、椰蓉?fù)樗?成滿(mǎn),烘烤時(shí)不會(huì)溢出嗎?放心,不會(huì)的。這跟葡撻還不一樣,葡撻的撻水膨脹率很高,所以我們一般倒7-8成滿(mǎn),否則烘烤時(shí)容易溢出。但椰蓉?fù)樗捎谝匚樟藫樗?,所以膨脹率較低,9成滿(mǎn)烘烤出來(lái)基本與撻皮平齊,看起來(lái)顯得飽滿(mǎn)有食欲!2、為什么我按方子烘烤,會(huì)烤焦呢?由于每個(gè)人烤箱不同,方子溫度時(shí)間僅供參考,需要根據(jù)自己烤箱脾氣靈活調(diào)整。比如你的烤箱實(shí)際溫度偏高20度,那你按方子190度烤,就相當(dāng)于你實(shí)際用的是210度在烤,當(dāng)然就會(huì)烤焦。但即便是溫度偏高,如果你保持觀(guān)察,上色了就及時(shí)出爐,也不會(huì)烤焦。所以烤不烤焦這種事,完全是個(gè)人主觀(guān)上原因,跟方子都沒(méi)多大關(guān)系哈。
